More honey, its conker!
We have harvested our late summer honey this week. Last time it was a lovely amber colour but this time to our surprise it was a beautiful tawny brown, with a strong and fragrant taste. I am starting to sound like a wine taster, but there were no notes of vanilla in this honey. We are not sure what has made the difference but suspect that the last lot was more agricultural crops based and this might have been more woodland but really we are not sure. The drought in our area might have affected it, it might just be more concentrated as there is less moisture around. All the charts we have seen though suggest that the dark colour might be as the honey is based around horse chestnuts ? we are not really sure on that but it sounds really good so I am sticking with it.
